BEST POTATO PANCAKES EVER – It’s A Keeper

this is very good! Real German potato pie is “grated” as the recipe states, not sliced. The slicing produces something that looks like hash brown. Be sure not only to drain the liquid, but also to squeeze the water into the kitchen towel. Waste of time, yes, but well worth the effort.

This is a traditional potato pancake recipe, and it’s a great comfort food. Serving with apple sauce & sour cream for a lightly dinner, or with grilled chicken about a hearty winter meal. You can utlize more flour if the mix seems too wet.

* You will need:

° 4 cups cold mashed potatoes

° 5 slices of bacon

° 1/2 teaspoon onion powder

° Salt 1/2 teaspoon

° 1/2 teaspoon black pepper

° 2 eggs, beaten well

° 1/2 cup shredded cheddar cheese

* Directions :

Place the bacon in a deep skillet, and cook over medium-high heat, stirring occasionally, until browned and crunchy, about 10 minutes.

Remove bacon and crumbs and set aside. Let the bacon broth in a skillet.

Mix the ground potatoes, eggs, onion powder, salt, and black pepper together in a bowl;

Adding crumbled bacon & cheddar cheese.

Shape mix into 8 pieces.

Heat bacon broth on medium heat, & frying pancakes in broth to soften on every side, about 5 minutes per part .
